Lovin’ from the Oven: Ginger Pear Muffins


As  promised, here’s my Ginger Pear Muffin recipe:

Sweet and spicy. If you are what you eat, what could be better?
Ingredients
  • 2 cups very ripe pear, peeled and cut into chunks (canned could also be used, but don't expect it to be as wonderful as fresh!)
  • ½ cup crystallized ginger, cut in to small chunks
  • 2 cups flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp nutmeg (fresh grated, if you have any on hand)
  • ½ tsp cinnamon
  • 2 large eggs
  • 1 cup milk
  • ⅔ c packed brown sugar
  • 6 tbsp melted butter
  • 1 tsp vanilla extract
Instructions
  1. Preheat oven to 400 degrees F.
  2. Prepare muffin tins by using cooking spray or butter. (These will not work well with paper liners. They are more bread-like than cake-like and will stick to the paper.) Whisk together dry ingredients in a large bowl. In another bowl, whisk together the eggs, milk, butter, and vanilla. Add sugar and mix well. Add to the flour mixture and blend only until moistened. Fold in pears and ginger.
  3. Divide among muffin cups. Bake 15-18 minutes until golden brown and a toothpick inserted in the center of a muffin comes out clean.
